'Game Time' Turkey Black Bean Chili

Sunflower Oil (Coated Pan)

2 Cans Black Beans

1 Large Yellow Onion (Diced)

12-15 Garlic Cloves (Minced)

1 Medium Green Bell Pepper (Diced)

1 Fresno Pepper or Jalapeno (Chopped)

1 Can Stewed Tomatoes

1 Can Diced Tomatoes

6 oz Tomato Paste

1/2 Teaspoon Sea Salt

3-4 Tablespoons Chili Powder

1/2 Teaspoon Cumin

2 Cups of Water

4 Tablespoons Fresh Chives

1 1/4 Cups American Cheddar Cheese

Season Ground Turkey

1/2 Teaspoon of Salt Pinch of Black Pepper

1/2 Teaspoon of Garlic Powder

Authentic chili should be cooked in a large cast iron pot. Use a large heavy pot if you do not have one. Season ground turkey with Salt, pepper and garlic powder. Preheat your pot to medium high. When the pot comes up to temperature add 3-4 Tablespoons of sunflower oil or canola oil. Add in the seasoned ground turkey. Turkey should sizzle when it hits the pot. Cook for 4 minutes then mix. Turkey is done when pink color is gone. Remove turkey from the pot. Put it in a large mixing bowl. Add diced onions to the pot. Cook the onions until they become translucent. Stir in minced garlic and cook for 2-3 minutes or until lightly toasted. Add bell peppers; cook for about a minute. Stir in the tomato paste. The paste should cover all of the aromatics. Allow it to cook until it changes from red to dark red. It should become smoky at this point. Be careful not to burn it. Add tomatoes, water, beans and the rest of the ingredients EXCEPT chives and cheese. Reduce the cooking temperature to medium low. Cook for 35 minutes. Stir occasionally to prevent sticking. Garnish with chives and American Cheddar Cheese. Serve with Hot Water Cornbread. Don't bite your fingers!
